Pancetta e Pear

The pear chef’s special was the highlight of the visit. Topped with smoked pancetta, caramelized pears, crispy sage, and a luxurious mix of brown butter–infused panna, fontina, and pecorino romano, finished with a drizzle of white balsamic, it delivered a perfect balance of sweet, salty, and savory. The combination of tender pears, smoky pancetta, and nutty, melted cheeses on the blistered crust made every bite feel indulgent yet refined easily some of the best pizza I’ve had in the area.

Seasonal Chef’s Menu

I only tried the pear chef’s special pizza, but if every dish on Dough’s rotating seasonal chef’s menu tastes as good as that, it’s worth diving in. From inventive pizzas to seasonal creations beyond the pie, it’s clear the kitchen knows how to make every bite count.

Margherita

I ordered the Margherita, made with San Marzano D.O.P. tomato sauce, house-made fior di latte, Lone Star Farm basil, and Locatelli pecorino romano. The dough was excellent—light, airy, and nicely blistered—and the fior di latte added a rich, creamy layer. I didn’t care for the tomato sauce, though, which kept the pizza from fully coming together for me despite the high-quality ingredient

My Overall thoughts

Visiting Dough in San Antonio was a study in contrasts—and in craftsmanship. The restaurant itself is welcoming and unpretentious, designed for savoring whole pies rather than rushing through a slice. The Margherita showcased their skill with dough and cheese, even if the tomato sauce wasn’t quite to my taste. The pear chef’s special, on the other hand, was a revelation: perfectly balanced flavors, inventive toppings, and expertly executed dough made it easily some of the best pizza I’ve had in the area. Overall, Dough proves that with high-quality ingredients and careful attention, even familiar dishes can feel exciting.
